Dice the pears small so they soften fully in the short bake. Cooling completely is what sets the filling and keeps the bars from crumbling. Store covered at room temperature for 2 days or refrigerate up to 5; they also freeze well.
Method
-
Heat the oven to 350°F (175°C). Line a 9x13-inch pan with parchment, leaving an overhang on two sides.
-
Stir the oats, flour, brown sugar, baking soda, salt and 1/2 tsp of the cinnamon together. Pour in the melted butter and mix until the crumbs hold together when squeezed.
-
Press just over half the crumb mixture firmly into the bottom of the pan. Bake while you make the filling.
-
Toss the pears with the granulated sugar, lemon juice, cornstarch, ginger and remaining 1/2 tsp cinnamon.
-
Spread the pears over the warm crust, then scatter the remaining crumbs evenly on top.
-
Bake , until the top is deep golden and the pear juices bubble at the edges.
-
Cool completely in the pan, at least , then lift out by the parchment and cut into 16 squares.
