Cook's note

Ripe mangoes make the best lassi, and frozen chunks are a great year-round stand-in that also chill the drink without much ice. The yogurt should be tangy and plain, so skip any sweetened or vanilla varieties. If the lassi is too thick to pour, loosen it with a splash of milk or cold water.

Method

  1. Add the mango, yogurt, milk, honey, cardamom and lime juice to a blender.

  2. Blend on high for , until completely smooth.

  3. Add the ice and blend for more, until thick and frosty.

  4. Taste and adjust, adding more honey if your mango is not very sweet.

  5. Pour into two tall glasses and scatter with the pistachios. Serve right away.
