Cook's note

Stirring in the last third of chocolate off the heat helps it set with a glossy finish and a clean snap. Pack the pieces in a tin for an easy homemade gift.

Method

  1. Line a rimmed baking sheet with parchment paper.

  2. Melt two thirds of the chocolate in a heatproof bowl set over a pot of barely simmering water, stirring until smooth. Remove from the heat and stir in the remaining chocolate until melted, then stir in the vanilla.

  3. Pour the chocolate onto the parchment and spread to a rectangle about 1/4 inch thick.

  4. Scatter the pistachios and cherries over the top and gently press them in. Sprinkle with the flaky salt.

  5. Refrigerate for about , until completely firm, then break into irregular pieces.

  6. Store in an airtight container in the refrigerator for up to 2 weeks.
