Cook's note

Steeping three tea bags in a small amount of water gives a tea strong enough to stand up to the milk. For a dairy-free version, use oat milk, which froths especially well. Adjust the honey to taste, and try maple syrup for a deeper sweetness.

Method

  1. Pour the boiling water over the tea bags in a heatproof pitcher and steep for . Press the bags gently and discard them.

  2. While the tea steeps, heat the milk in a small saucepan over medium heat until steaming but not boiling, about .

  3. Whisk the honey and vanilla into the hot tea until dissolved.

  4. Froth the hot milk with a handheld frother or whisk it vigorously for , until it doubles in volume.

  5. Divide the tea between two mugs, then pour in the milk, holding back the foam with a spoon. Spoon the foam on top and sprinkle with the lavender, if using.
