Cook's note

Patting the fillets dry helps the glaze cling instead of sliding off. Pull the salmon when the center is just opaque, since it keeps cooking as it rests. Spoon any glaze from the pan over the top before serving.

Method

  1. Heat the oven to 400°F (200°C) and line a sheet pan with parchment paper.

  2. Whisk together the maple syrup, both mustards, olive oil and vinegar in a small bowl.

  3. Place the salmon on the pan, pat dry, and season with the salt and pepper. Spoon the glaze evenly over the fillets.

  4. Bake for , until the salmon flakes easily with a fork and is just opaque in the center.

  5. Rest for , then sprinkle with parsley and serve with lemon wedges.
