Preheating the pan gives the potatoes a head start on a crisp, golden underside. Add the peppers later so they soften and char without turning to mush. Read the sausage label, since some brands add extra seasonings.
Method
-
Heat the oven to 425°F (220°C) with a large rimmed sheet pan inside.
-
Toss the potatoes with 1 tablespoon of the olive oil, the oregano, 1/2 teaspoon of the salt and the pepper. Spread them cut side down on the hot pan and roast for .
-
Meanwhile, toss the pepper strips with the remaining 2 tablespoons oil, the smoked paprika and the remaining 1/4 teaspoon salt.
-
Push the potatoes aside, add the sausages and peppers to the pan, and roast for more, turning the sausages once, until browned and cooked through (160°F/71°C) and the peppers are tender and charred at the edges.
-
Drizzle with the vinegar, scatter with parsley, and serve straight from the pan.
