Cook's note

Feta varies a lot in saltiness, so taste before you add any salt, which it rarely needs. For the creamiest result, use block feta packed in brine rather than pre-crumbled. The dip keeps in the fridge for 4 days, so let it sit out for 15 minutes and stir before serving.

Method

  1. Add the feta, yogurt, olive oil and lemon juice to a food processor.

  2. Blend for , scraping down the sides twice, until the dip is completely smooth and fluffy.

  3. Blend in the lemon zest and black pepper, then taste. Add a splash more yogurt if it feels too thick.

  4. Spoon the dip into a shallow bowl and swirl the top with the back of a spoon to make a well.

  5. Drizzle with the honey and a little extra olive oil.

  6. Scatter the pistachios and thyme over the top and serve with pita, cucumber and carrot sticks.
