Cook's note

Choose pears that give slightly when pressed near the stem, since fully soft ones turn mushy in the oven. If the juices get too thin, simmer them in a small pan for a few minutes until syrupy. Leftover pears keep in the fridge for 3 days and are lovely cold over oatmeal.

Method

  1. Heat the oven to 400 F. Toast the walnuts on a small baking sheet for , until fragrant. Cool, then chop roughly.

  2. Halve the pears lengthwise and scoop out the cores with a spoon, leaving the stems on if you like.

  3. Whisk the honey, melted butter, vanilla, cinnamon and salt together in a small bowl.

  4. Arrange the pears cut side up in a baking dish just large enough to hold them in one layer. Spoon the honey mixture over them.

  5. Roast for , basting once halfway through, until the pears are tender when poked with a knife and the edges are golden.

  6. Spoon the pan juices over the pears, then top each half with a dollop of yogurt, the chopped walnuts and an extra drizzle of honey. Serve warm.
