Onion-free Garlic-free
Baked Apple Cinnamon Oatmeal
A cozy, custardy baked oatmeal with tender apples, walnuts and warm cinnamon. Make it Sunday and reheat all week.
Serve with a splash of cold milk or a spoonful of yogurt. Leftovers keep 4 days in the fridge and reheat in the microwave in about a minute.
Ingredients
- 2 cups old-fashioned rolled oats
- 1/2 cup chopped walnuts
- 1/3 cup brown sugar
- 1 tsp baking powder
- 1 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 tsp salt
- 2 cups whole milk
- 1 large egg
- 3 tbsp melted butter, plus more for the dish
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 2 medium apples, peeled and diced (about 2 cups)
Steps
- Heat the oven to 375°F (190°C). Butter an 8-inch square baking dish.
- Whisk the oats, half the walnuts, brown sugar, baking powder, cinnamon, nutmeg and salt in a large bowl.
- In a second bowl whisk the milk, egg, melted butter, maple syrup and vanilla.
- Spread half the apples in the dish. Add the oat mixture, pour the milk mixture over it, then top with the remaining apples and walnuts.
- Bake 38 to 42 minutes until golden and set in the center. Rest 5 minutes before serving warm.
