Cook's note

Look for a brie with a firm, intact rind so it holds together as it melts. If your brie is very ripe, bake it closer to 10 minutes. Leftovers reheat nicely, or spread them on a turkey sandwich the next day.

Method

  1. Heat the oven to 375°F. Place the brie in a small oven-safe dish or on a parchment-lined baking sheet.

  2. Melt the butter in a small skillet over medium heat. Add the pecans and toast, stirring, until fragrant, about .

  3. Stir in the honey and half the thyme and cook for , until bubbling.

  4. Spoon the pecan mixture over the brie. Bake until the cheese is soft and gooey in the center, .

  5. Sprinkle with the remaining thyme and the flaky salt. Serve warm with toasted baguette and apple slices.
