Cook's note

Cool the compote before layering, since warm fruit thins the yogurt. For make-ahead parfaits, assemble the yogurt and compote layers up to 2 days in advance and add the granola just before eating. Fresh berries work in season, so simmer them for only 2 to 3 minutes.

Method

  1. Combine the frozen berries, honey and lemon juice in a small saucepan over medium heat. Cook for , stirring, until the berries soften and release their juices.

  2. Stir the cornstarch into the cold water, add it to the pan and simmer for , until the compote thickens slightly. Cool for .

  3. Stir the yogurt and vanilla together in a bowl until smooth.

  4. Spoon a layer of yogurt into the bottom of four glasses, then add a spoonful of compote and a layer of granola. Repeat the layers once more.

  5. Top each glass with the fresh blueberries and a small drizzle of honey. Serve right away so the granola stays crunchy.
