Cook's note

A mix of sweet and tart apples gives the best flavor, and Gala or Fuji soften faster than Granny Smith. Leave the peels on and blend smooth at the end if you want a rosy pink sauce. Keeps in the fridge for 1 week and freezes for 3 months.

Method

  1. Peel, core and cut the apples into 3/4 inch chunks.

  2. Combine the apples, water, lemon juice, maple syrup, cinnamon stick and salt in a medium pot. Bring to a simmer over medium heat.

  3. Cover and cook for , stirring now and then, until the apples are soft and starting to collapse.

  4. Remove the lid and cook for more, stirring often, until most of the liquid has evaporated.

  5. Discard the cinnamon stick. Stir in the ground cinnamon and vanilla.

  6. Mash with a potato masher to your preferred texture. Serve warm or chilled.
