Cook's note

Mashing the avocado with the lime juice first helps keep the color bright and the flavor balanced. Ripe avocados should give slightly when pressed; underripe ones will never turn creamy. Seed the jalapeño for a mild dip, or leave some seeds in for heat.

Method

  1. Halve the avocados, remove the pits, and scoop the flesh into a medium bowl.

  2. Add the lime juice and salt, then mash with a fork to your preferred texture, leaving plenty of chunks.

  3. Fold in the tomato, cilantro, jalapeño and cumin.

  4. Taste and adjust with more salt or lime juice.

  5. Serve right away with tortilla chips, or press plastic wrap directly onto the surface and refrigerate for up to .
