The noodles soak up the sauce as they sit, so loosen leftovers with a splash of warm water before serving. Check that your soy sauce and peanut butter are plain, with no flavored seasonings added.
Method
-
Cook the noodles in boiling water according to the package directions. Drain, rinse under cold water until cool, and drain well. Toss with a drizzle of the sesame oil so they do not stick.
-
Whisk the peanut butter, soy sauce, rice vinegar, remaining sesame oil, honey, ginger and garlic in a large bowl. Add warm water a tablespoon at a time until the sauce is smooth and pourable.
-
Add the noodles to the bowl and toss until evenly coated in sauce.
-
Fold in the cucumber, carrot and most of the cilantro.
-
Divide among bowls and top with the peanuts, sesame seeds and remaining cilantro. Serve with lime wedges.
