Cook's note

Finely shredding the cabbage helps it soak up the dressing without turning watery. Chilling for half an hour mellows the raw bite, and the slaw stays crisp for a full day. Serve it alongside barbecue, fish tacos or crispy chicken.

Method

  1. Toss the shredded cabbage and carrots together in a large bowl.

  2. Whisk the mayonnaise, buttermilk, vinegar, lemon juice, sugar, Dijon, salt and pepper in a small bowl until smooth.

  3. Pour the dressing over the vegetables, add the dill, and toss until evenly coated.

  4. Cover and refrigerate for at least so the cabbage softens slightly and the flavors blend.

  5. Toss again, taste for salt and lemon, and serve cold.
