Cook's note

The sauce thickens slightly as it chills, so thin it with a little water just before serving if needed. It keeps in a covered jar in the fridge for up to 1 week. Try it on crispy chicken, roasted potatoes, as a sandwich spread, or tossed through a crunchy slaw.

Method

  1. Add the mayonnaise, Dijon, honey, whole-grain mustard, lemon juice, vinegar, salt and pepper to a small bowl.

  2. Whisk until completely smooth and glossy.

  3. Whisk in the water, 1 teaspoon at a time, until the sauce is thick but easy to dip into or drizzle.

  4. Taste and adjust, adding more honey for sweetness or more lemon for tang. Chill for before serving.
