Onion-free Garlic OK
Creamy Tomato Soup with Roasted Garlic
Silky tomato soup built on butter, garlic and basil. Pure comfort, no onion needed.
The pinch of sugar rounds out the acidity that onion would normally soften.
Ingredients
- 2 tbsp butter
- 1 tbsp olive oil
- 5 garlic cloves, sliced
- 1 can (28 oz) whole peeled tomatoes
- 1 cup water
- 1 tsp sugar
- 1/2 cup heavy cream
- 1/4 cup fresh basil leaves
- Salt and pepper to taste
Steps
- Melt the butter with the olive oil over medium heat. Add the garlic and cook 2 minutes until fragrant but not browned.
- Add the tomatoes with their juice, the water and the sugar. Simmer 20 minutes, breaking up the tomatoes.
- Add the basil and blend until smooth.
- Stir in the cream, season with salt and pepper, and heat through gently.
