Cook's note

Hot pan, room-temperature batter and a closed oven door are the three keys to height. Opening the oven early lets the steam escape and the popovers collapse.

Method

  1. Place a 6-cup popover pan (or six buttered 6-oz ramekins on a baking sheet) in the oven and heat to 450°F (230°C).

  2. Blend the flour, milk, eggs, salt and 2 tbsp melted butter for until smooth, then rest the batter for .

  3. Carefully remove the hot pan and brush each cup generously with butter; it should sizzle.

  4. Fill each cup about two-thirds full and return to the oven right away.

  5. Bake at 450°F without opening the door, then lower to 350°F (175°C) and bake more until deep golden and firm.

  6. Prick each popover with a knife tip to release steam. Stir the softened butter with the honey and a pinch of flaky salt and serve alongside.
