Cook's note

Chicken thighs stay juicy and forgiving, but breasts work too; cut them slightly smaller and watch the time. Pick a soy sauce with a short, simple ingredient list. Leftovers keep for 3 days in the fridge and reheat well with a splash of water.

Method

  1. Pat the chicken dry and toss with 1/4 cup cornstarch and a pinch of salt until evenly coated.

  2. Whisk the honey, soy sauce, rice vinegar and sesame oil in a small bowl.

  3. Heat 2 tbsp oil in a large skillet over medium-high heat. Cook the chicken in a single layer for , turning once, until golden and cooked through. Transfer to a plate.

  4. Add the remaining oil and the broccoli with 2 tbsp water. Cover and steam for until bright green and just tender.

  5. Add the garlic and ginger and stir for until fragrant.

  6. Pour in the sauce and bring to a simmer. Stir in the cornstarch slurry and cook for until glossy and thick.

  7. Return the chicken to the pan and toss to coat. Sprinkle with sesame seeds and serve over rice.
