Cook's note

Water straight from the kettle is too hot for matcha and makes it bitter, so let it cool for a minute after boiling. A small bamboo whisk or a handheld milk frother both give a smooth, lump-free result. Use a good quality matcha, since the flavor is the whole drink. For a sweeter latte, add a little more honey or switch to maple syrup.

Method

  1. Sift the matcha into a small bowl to remove any lumps.

  2. Pour in the hot water and whisk briskly in a zigzag motion for , until smooth and frothy with no clumps.

  3. Whisk in the honey and vanilla until dissolved.

  4. Fill a tall glass with the ice and pour the cold milk over it.

  5. Slowly pour the matcha over the milk so it forms green swirls. Stir before drinking.
