Onion-free Garlic OK
Skillet Lemon-Garlic Shrimp Pasta
Garlicky shrimp, lemon and parsley tossed with spaghetti in about 25 minutes.
Pull the garlic off the heat the moment it smells sweet. Browned garlic turns bitter.
Ingredients
- 12 oz spaghetti
- 1 lb large shrimp, peeled and deveined
- 4 tbsp butter
- 6 garlic cloves, minced
- 1/2 tsp red pepper flakes
- 1 lemon, zested and juiced
- 1/4 cup chopped fresh parsley
- 1/2 cup reserved pasta water
- Salt to taste
Steps
- Cook the spaghetti in well-salted water until just shy of al dente. Reserve 1/2 cup of the water, then drain.
- Melt 2 tbsp butter in a large skillet over medium-high heat. Cook the shrimp 1 to 2 minutes per side and set aside.
- Lower the heat, add the remaining butter, garlic and pepper flakes and cook 1 minute.
- Add the pasta, lemon zest, lemon juice and pasta water and toss until glossy.
- Return the shrimp, add the parsley and serve right away.
