Cook's note

Brew the coffee double strength if you like a bold latte, since the ice and milk will soften it. The syrup keeps in a jar in the fridge for up to 2 weeks. Swap in oat milk for a dairy-free version, or whisk the milk until frothy before pouring for a more café-like finish.

Method

  1. Combine the maple syrup, water and cinnamon stick in a small saucepan. Warm over medium heat for , until steaming but not boiling.

  2. Remove from the heat and let the syrup steep for . Discard the cinnamon stick.

  3. Fill two tall glasses with the ice.

  4. Divide the syrup between the glasses, then pour in the cooled coffee.

  5. Top each glass with the cold milk and stir well.

  6. Dust with the ground cinnamon and serve right away.
