Peanut Lime Dipping Sauce

A creamy, punchy peanut sauce with lime, ginger and a little heat. Whisked in 10 minutes for spring rolls, noodles, satay or roasted vegetables.

Natural peanut butter (just peanuts and salt) gives the cleanest flavor; if yours is unsalted, add a pinch of salt. The sauce thickens in the fridge, so loosen it with a splash of hot water before serving. It keeps 5 days.

Method

  1. Whisk the peanut butter, soy sauce, lime juice, maple syrup, sesame oil and ginger in a bowl until smooth. It will look thick and stiff at first.

  2. Whisk in the hot water a tablespoon or two at a time until the sauce is pourable but still coats a spoon.

  3. Stir in the pepper flakes, then taste and adjust with more lime for brightness or more soy for salt.

  4. Spoon into a small bowl and scatter the chopped peanuts over the top to serve.
