Cook's note

Steeping the tea off the heat keeps it from turning bitter against the tart cranberries. It’s also lovely chilled over ice, and the base keeps in the refrigerator for 4 days, ready to reheat gently.

Method

  1. Add the water, cranberries, orange rounds, cinnamon sticks, cloves and ginger to a medium pot and bring to a boil.

  2. Reduce the heat to low and simmer for , until the cranberries burst and the water turns deep red.

  3. Press the berries lightly with a spoon to release their juice, then remove the pot from the heat.

  4. Add the tea bags and steep for , no longer, so the tea stays smooth.

  5. Remove the tea bags, then stir in the honey a spoonful at a time until the tartness is balanced.

  6. Strain into mugs and serve hot, each with a fresh orange round.
