Spiced Hot Chocolate

Real-chocolate hot cocoa, thick and silky, warmed with cinnamon, vanilla and a whisper of cayenne. Ten minutes on the stove.

Making a paste with the cocoa first keeps it from clumping. Use a chocolate bar you’d happily eat on its own; chips contain stabilizers that keep them from melting smoothly.

Method

  1. Warm the milk in a saucepan over medium heat until steaming, with small bubbles at the edge.

  2. In a small bowl, whisk the cocoa, sugar, cinnamon, cayenne and salt with a few tablespoons of the hot milk into a smooth paste, then whisk it into the pot.

  3. Add the chopped chocolate and whisk until melted and silky. Don't let it boil.

  4. Take the pot off the heat and stir in the vanilla.

  5. Whisk hard for to build a little foam, then pour into mugs and add a cinnamon stick to each.
