Cook's note

Keep shaking the pot the whole time, since sugar burns quickly in hot oil. Pour the popcorn out the moment popping slows, because it keeps cooking in the hot pot. Stored in an airtight container, it stays crisp for up to 2 days.

Method

  1. Mix the sugar and cinnamon together in a small bowl.

  2. Heat the oil in a large heavy pot with a lid over medium heat. Add 3 kernels and cover until they pop.

  3. Add the rest of the kernels and the cinnamon sugar. Cover and shake the pot constantly over the heat so the sugar does not scorch.

  4. When the popping slows to between pops, immediately remove the pot from the heat.

  5. Pour the popcorn into a large bowl, sprinkle with the salt and toss well. Spread on a baking sheet for so the sugar sets, then serve.
