Cook's note

Strain the puree for a smooth, clear drink, or skip the sieve for a pulpier, smoothie-style lemonade. Frozen strawberries work well and keep the pitcher cold. It keeps for 3 days in the fridge; stir before serving since the fruit settles.

Method

  1. Heat the sugar and 3/4 cup water in a small saucepan, stirring, until the sugar dissolves. Cool for .

  2. Blend the strawberries with the sugar syrup until completely smooth.

  3. Strain the puree through a fine mesh sieve into a large pitcher, pressing on the solids.

  4. Stir in the lemon juice and the cold water. Taste and add more sugar or lemon juice as needed.

  5. Chill for at least .

  6. Stir well, pour over ice and garnish with lemon slices and mint.
