Blotting the tomato keeps the bread crisp instead of soggy. Low heat is key, as it gives the cheese time to melt before the bread burns. Serve with a bowl of tomato soup for dipping.
Method
-
Pat the tomato slices dry with a paper towel and sprinkle lightly with salt and pepper.
-
Butter one side of each bread slice. Flip two slices butter-side down and spread the other side with the mustard.
-
Layer half the mozzarella and cheddar on each, then add tomato slices and basil, and finish with the remaining cheese. Top with the remaining bread, butter-side up.
-
Heat a large skillet over medium-low heat. Cook the sandwiches per side, pressing gently, until the bread is deep golden and the cheese is fully melted. Cover the pan for the last minute if the cheese needs help melting.
-
Rest for , then slice in half and serve hot.
