Cook's note

Cold berries straight from the fridge make the chocolate set faster, but let any condensation dry before dipping. Store in a single layer in the refrigerator for up to one day.

Method

  1. Line a baking sheet with parchment paper. Make sure the strawberries are completely dry, or the chocolate will not cling.

  2. Melt the dark chocolate and coconut oil in a heatproof bowl set over barely simmering water, stirring until smooth. Remove from the heat.

  3. Holding each strawberry by the stem, dip it into the chocolate, lift and let the excess drip off. Set on the parchment.

  4. While the chocolate is wet, sprinkle some berries with pistachios and a little sea salt.

  5. Melt the white chocolate the same way, then drizzle it over the berries with a fork or a small piping bag.

  6. Chill for , until the chocolate is firm. Serve the same day for the best texture.
