Cold berries straight from the fridge make the chocolate set faster, but let any condensation dry before dipping. Store in a single layer in the refrigerator for up to one day.
Method
-
Line a baking sheet with parchment paper. Make sure the strawberries are completely dry, or the chocolate will not cling.
-
Melt the dark chocolate and coconut oil in a heatproof bowl set over barely simmering water, stirring until smooth. Remove from the heat.
-
Holding each strawberry by the stem, dip it into the chocolate, lift and let the excess drip off. Set on the parchment.
-
While the chocolate is wet, sprinkle some berries with pistachios and a little sea salt.
-
Melt the white chocolate the same way, then drizzle it over the berries with a fork or a small piping bag.
-
Chill for , until the chocolate is firm. Serve the same day for the best texture.
