Classic Chimichurri

The bright, garlicky Argentine herb sauce of parsley, oregano, red wine vinegar and olive oil. Hand-chopped, ready in 15 minutes, great on everything grilled.

Chop by hand rather than in a food processor: you want distinct flecks of herb suspended in oil, not a paste. It keeps 3 days in the fridge; let it come back to room temperature so the oil loosens.

Method

  1. Stir the garlic, vinegar and salt together in a bowl and let it sit for to mellow the garlic.

  2. Add the parsley, oregano, pepper flakes and black pepper.

  3. Stir in the olive oil.

  4. Let it stand at least before serving so the flavors meld. Spoon over grilled steak, chicken, fish or roasted vegetables.
